Apple, celery and walnut salad

Apple, celery and walnut salad...

So easy and so lovely πŸ™

Ingredients:
πŸ’œ 3 or 4 apples, peeled and cut in cubes
πŸ’œ 6 to 8 branches of celery, finely sliced
πŸ’œ A handful of raisins
πŸ’œ A handful of walnuts
πŸ’œ 4 or 5 spoons of mayonnaise (vegan or normal, up to you)
πŸ’œ Salt and pepper
πŸ’œ Baby leaf spinach

Get it all in a bowl, mix and serve with spinach.

PS: If it is to eat with kids, you might want to sprinkle the nuts on your own plate.

Ingredients: A few leaves of curly blue kale A few leaves of other salad (lettuce etc) 1 apple, peeled and cubed cheddar or blue cheese such as Stilton, cubed or cut in small pieces walnuts cheddar, sliced (to be melted on toast) 1 slice of red onion (to be melted on toast) 2 or 3 spoons of vegetable oil (I use Rapeseed myself but any other oil is fine) 1 spoon of Balsamic vinegar salt / pepper thyme 1 teaspoon of Maple syrup or honey Preparation: Cut your salad leaves, wash them and place them on a plate Add the diced cheese, apples and walnuts Prepare your toasts with butter, cheddar and red onion Dressing: mix the oil, vinegar, syrup, salt, pepper and thyme Pour the dressing on top of the salad Serve with the Cheddar and onion toasts 10 min to make only! Something that my kids actually eat ! The mango salad. Ingredients: πŸ’œ1 x mango πŸ’œ1 x lime πŸ’œ1 x red onion (or half) πŸ’œ1 x red pepper (or half) πŸ’œOlive oil πŸ’œBaby spinach πŸ’œSalt, if possible coarse sea salt πŸ’œA sprinkle of nuts or seeds (walnuts, pine nuts, sunflower seeds etc - what you have at hand) Instructions πŸ‘‡ 1) cut the mango in small cubes 2) cut finely the onion and pepper 3) throw everything in a salad bowl 4) add a whole lime juice, a good amount of olive oil, salt and a few handfuls of spinach 5) mix everything 6) sprinkle with nuts and serve My kids love the juice you get from the dressing ! 😁 They are not too keen on the onion and red pepper though so do not hesitate to reduce these ingredients or take them away.
